These ribs are the kind of meal that makes everyone stop talking once the first bite is taken. They are tender, juicy, smoky, deeply seasoned, and coated in a rich barbecue glaze that caramelizes beautifully during cooking. The secret to incredible ribs isn’t complicated. It comes down to choosing good-quality ribs, seasoning them generously, cooking them slowly, and finishing them with barbecue sauce at the right time. For this recipe, you will need 2 racks of pork ribs, about 3 to 4 pounds each, 2 tablespoons brown sugar, 1 tablespoon paprika, 2 teaspoons garlic powder, 2 teaspoons onion powder, 1 teaspoon smoked paprika, 1 teaspoon salt, 1 teaspoon black pepper, ½ teaspoon chili powder, ½ teaspoon ground cumin, 1 cup barbecue sauce, 2 tablespoons honey or maple syrup, 2 tablespoons apple cider vinegar, and ½ cup apple juice or water.Begin by preparing the ribs. Remove the ribs from their packaging and pat them thoroughly dry with paper towels. Turn them over so the bone side is facing upward. Slide a small knife underneath one edge, loosen it, then grip it with a paper towel and carefully pull it away. Removing this membrane allows the seasoning to penetrate better and gives the finished ribs a more pleasant texture. In a small bowl, combine the brown sugar, paprika, smoked paprika, garlic powder, onion powder, salt, black pepper, chili powder, and cumin. Rub the seasoning mixture generously over both sides of the ribs. Make sure the entire surface is covered. For even better flavor, allow the seasoned ribs to rest in the refrigerator for at least 30 minutes, or leave them covered for several hours. When you’re ready to cook, preheat your oven to 275°F (135°C). Place each rack of ribs on a large sheet of heavy-duty aluminum foil. Pour a small amount of apple juice or water around the ribs, then wrap the foil tightly so steam stays inside. Place the wrapped ribs on a baking sheet and cook slowly for approximately 2½ to 3½ hours, depending on their size and thickness. The ribs should become very tender during this slow cooking stage. You should be able to see the meat beginning to pull back slightly from the bones. While the ribs are cooking, prepare the barbecue glaze. Mix the barbecue sauce with honey or maple syrup and apple cider vinegar. The honey adds sweetness and helps create that glossy caramelized coating, while the vinegar balances the richness with a little acidity. Once the ribs are tender, carefully remove them from the oven and open the foil. Be careful because hot steam will escape. Transfer the ribs to a baking sheet lined with foil or parchment paper. Brush them generously with the barbecue sauce mixture. Increase the oven temperature to 425°F (220°C) and return the ribs to the oven uncovered for approximately 10 to 15 minutes. Brush them with another layer of sauce and cook for another 5 to 10 minutes until the glaze becomes sticky, glossy, and caramelized. For an even deeper barbecue flavor, you can finish the ribs under a broiler for a few minutes. Watch them carefully because the sugar in the sauce can burn quickly. Remove the ribs from the oven and let them rest for approximately 10 minutes before cutting. Use a sharp knife to cut between the bones and serve the ribs while they’re hot. These ribs pair beautifully with classic barbecue sides such as creamy coleslaw, baked beans, cornbread, potato salad, roasted corn, macaroni and cheese, or crispy roasted potatoes. For the best results, don’t rush the cooking process. The low-and-slow method gives the connective tissue time to break down, which is what helps produce that incredibly tender texture. If you want a stronger smoky flavor, use smoked paprika in the dry rub and a smoky barbecue sauce. You can also add a small amount of liquid smoke to the sauce, but use it sparingly because it can become overpowering. For a spicier version, increase the chili powder or add cayenne pepper to the dry rub. For sweeter ribs, add a little more brown sugar or honey to the glaze. The finished ribs should have a deeply browned exterior, a sticky barbecue coating, and tender meat that comes away from the bone easily. Serve them immediately with plenty of napkins—because these are the kind of juicy, saucy BBQ ribs that are almost impossible to eat neatly. And if you’re making these for a family gathering, don’t be surprised if the entire platter disappears before you get a chance to save leftovers.
